Directions
Single-step infusion mash for 60 minutes at 153° F. Ferment for 5-7 days at 68°. About 3-4 days before you plan to keg or bottle, rack to a secondary and add 3 dried chipotle peppers. Taste each day until it reaches your desired level of heat/smokiness from the peppers then package.
Notes
I've brewed this twice - the first time it was on the peppers for 3 days, the second time for 4, which I liked better. The pepper flavor and smokiness was more assertive but the heat was not overpowering.
